Sake party at Colonel Lal's house. Next was Tatsusen (^o^). When I visited a liquor store the other day, I was told that there was a rare sake available. This sake is a mixture of junmai sake and junmai ginjo ori. The aroma is of rice and sourness. The taste has a strong sweetness and umami. It also has a good amount of acidity. And the sharpness is good and clean. This delicious sake is perfect with grilled turban shells. It goes well with the bitterness of the liver.

I have been drinking Tatsuizumi since I bought it on a trip to Aizu 27 years ago.
I don't know if this is the original or not, but I felt the flavor was a bit lost in the acidity due to the overall lightness of the sake, and I enjoyed the sake more when heated than when cold.
It was more of a reminder of Pasteur's greatness than primitivism.
