This Junmai Daiginjo-shu uses "Saito no Shizuku," sake rice produced in Yamaguchi Prefecture.
It is a precious cup that offers the original flavor and aroma of rice, typical of Japanese sake.

I was glad I did. It has a clear, clean and elegant aroma. Omachi has a powerful image, but I have a feeling that it requires a great deal of skill to make it this clear.

Omine Sake Brewery in Mine City, Yamaguchi Prefecture, was founded in the mid-Edo period and closed in the 1960s, but in 2010 a local businessman revived the brewery.
This is the story behind the brewery's success.
The rice used is 100% Dewa Sanzu. It is a perfect cup for early summer with a hint of sourness that is typical of unfiltered, unpasteurized sake.

It is easy to drink and has a slight ginjo aroma. もはるとWhen I requested junmai sake from the owner, he brought me three bottles and told me that this was the "most standard taste.
This was the one he told me was the "most standard taste." Indeed, it is refreshing with a hint of junmai-like flavor. It is easy to drink, but the alcohol content is high, so you will need to drink some "washimizu. もはるとI asked the owner to bring me a recommendation from three of the bottles, and I "jacked" them.
The label is cool, and in fact the flavor is as guttural and impactful as this label.
It has a sake strength of +10, which makes it seem very dry, but it has a strong flavor and is not so harsh. However, the alcohol content is high, so be careful not to drink too much. もはるとOn a cold night, you want something hot to drink.
Kanbokuto's special junmai is dry and tastes great warmed up.
We paired it with dashi broth and chicken wing daikon radish. もはるとYamaguchi Shuzo's "Garden Uguisu" from Kurume City, Fukuoka Prefecture, is famous for its label featuring a Japanese bush warbler, but this is a Dharma label, aged for one to two years.
