Junmai Daiginjo-shu Unfiltered Nama-shu ⭐️⭐️⭐️⭐️⭐️⭐️⭐️ 100% Manamusume, Polishing ratio 50%, ALC 16.6 degrees Sake degree -6.0 Acidity 1.6 Amino acidity 0.3 Yeast: Yamagata yeast Manamusume] is the first sake rice we encountered. O Honjozo Namazume ALC 16%. ⭐️⭐️⭐️⭐️⭐️ It is a blend of Daiginjo sake.... It was sealed. Slightly dry, I guess. Kamikigen Ou was a clear yet aromatic sake. Dry sake that goes well with straw-roasted bonito...Kurei was said to go well with it, but it was out of stock. We chose from among Daishinshu's junmai ginjo-shu super dry, Chokaizan's junmai unfiltered sake +10, and Kamikigen's. Kojiro Kawasaki Maru: 20221114

Yamahai Junmai Sake ⭐️⭐️⭐️⭐️ Rice polishing ratio 65%, ALC 16 Room temperature: The aroma is weaker, but the weak acidity, umami, and indescribable aroma spread in the mouth. Lukewarm - Top warming: The acidity is a little more pronounced and the rice flavor is more fragrant. Hot - tobikiri-kan: Before drinking, the aroma smells of rice bran (= koji smell?), and the sourness or dryness of the rice flavor. I feel that the acidity or dry taste has become stronger. Junmai-shu ⭐️⭐️⭐️⭐️ Rich, super-harsh, stiff, 65% polished rice, 15% ALC You can taste the umami of rice, but I think it is quite a dry sake 😋. It has a sharpness and richness, so I think it goes well with fish dishes like sashimi and simmered fish tonight 🤗. I'm going to close tonight with a dry sake to finish it off 🥰.
