February 20 was our wedding anniversary and also the day of our biannual health checkup this year✨. My wife and I will go out to dinner again, but first we celebrated the day with a bouquet of flowers and her favorite Japanese sweets 🎁! I can't believe that it's already been a year 😁Let's have a drink to commemorate the occasion 🍶. Shiratakesen Junmai Sharikuchi Shinkoku Nama I got hooked on Hakugakusen from the old "Hakugakusen Limited Edition", but it was this "Shinkoku Nama" that got me even further into the swamp. [The gulping cup.] The aroma of rice with a hint of sourness, the feeling of gas on the tip of the tongue, the fresh and soft umami, and the soft and gentle aftertaste, and the aroma of rice that rises softly. [Mokkiri.] A cool, full rice aroma, a slight gassy feeling on the palate, and a fresh, soft, gentle umami and acidity that finishes with a refreshingly soft and gentle aftertaste. A perfect fusion of the softness of nama-shu, the umami of junmai dry sake, and the acidity typical of "Hakugakusen"! I knew this was going to be good! As we didn't have any fish to get drunk on, we had grilled beef ribs on a ceramic plate! The sweet fat of the beef, the soft umami mouthfeel, and the sharpness and lingering acidity go well together 🥰.

The fourth one is "Kamo Nanban" at Kyoya, a handmade soba restaurant with stone-ground noodles 🦆🍜, a seasonal treat. Since it was the end of my medical checkup, I splurged on lunch this day 🥰. In honor of reaching 500 check-ins, the "Hakugakusen" will be another ✨.

This time I reached 300 check-ins 🏳. Thanks to the progress I've made recently in my drinking activities (drinking out), I've reached the milestone pretty quickly 😁. Following 200CI and 291CI, I opened this bottle to commemorate the occasion 🍶. Hakugakusen Junmai Daiginjo Nurekasu. This time, we compared the sake with a sceptered stone sake cup and a Kiyomizu-yaki sake cup. [Gugumi-nomi] The aroma of rich and full rice, the mouthfeel, the deep and clear sweetness and umami, the sourness and spiciness, the sharpness, the deep and long lingering aftertaste, and the glossy aftertaste that lingers at the end. Trip time measured at 32 seconds ⏳. [Sake cup.] Aroma of mellow rice, clear and transparent sweetness and umami, followed by a deep and pleasant aftertaste that makes you open your mouth, and a glossy aftertaste that remains at the end. [Tsuki no Oubai] Rich rice aroma, clear and transparent umami with a hint of sweetness and acidity, and a pleasant lingering aftertaste with a glossy finish. The acidity that produces the lustrous aftertaste common to all of them is superb! The origin of "Nurekasu" comes from the Japanese name for the color of a woman's black hair, which has a beautiful sheen like a wet raven's feather. The entrée was Wakasoku and Hinezoku from Tokkuriken, a restaurant in the Togo district of Fukui City where Yasumoto Sake Brewery, which brews Hakugakusen, is located, and Yakisabasushi from Bishamon Sushi.

Taking a break from the second part of the day of working on GW drinking activities, this is my 291st check-in! [The name "291" can be read as "Fukui" and is also used as the name of an antenna store in Tokyo. This time, we're going to have a night of drinking local Fukui sake (🍶). Hakugakusen Junmai Daiginjo Tokusen I chose "Shiratakesen", which I often drink myself! Of course, the sake cup is made of Fukui blue Kotsuyaishi (sceptre-shaped stone), and we drank it with a sake cup and an inoguchi (cup)! [Gugunomi] A cool, fluffy, fruity and sweet aroma, a gentle and smooth sweetness and umami that follows through to the finish, a lingering fullness and view, and a slight bitterness that lingers in the throat at the end. [Slight bitterness in the throat at the end.] Full, sweet rice aroma; smoother and clearer than a sake with a small sake mouthpiece; sweet and umami flavors that follow through to the finish; a pleasant lingering taste that permeates the mouth; slight bitterness at the end. The entrée was dried red squid and sashimi of leatherfish from Echizen Town, which I bought when I went to Takahama Town, on the border between Fukui and Kyoto. [The sweet and savory flavors of the dried red squid matched perfectly with the salty taste of the sashimi. [The leatherfish with the liver brings out the clear flavor of the meat, the fatty flavor and the richness of the liver, and the lingering taste of the sake. We'll return next time to the second part of our GW Sake Activity Day✨.

Last night was the last full moon of the year [cold moon] 🌕As the clouds parted, I was mesmerized by the moon floating in the cold winter air and opened a bottle of sake [tonight, moon-viewing sake] 🍶. Hakugakuzen Junmai Daiginjo Assemblage Road Thinking I decided to commemorate my 200th check-in with "Hakugakusen", a sake with which I have a special connection 😁. The aroma of rice is clear and melon-like, the taste is sweet and melon-like, the aftertaste is mellow and deep, and the bitter taste lingers on the tip of the tongue. The acidity from the sweetness and umami and the lingering aftertaste are superb, and it would go well with any side dish, and it is also perfect as a "hare-no-hare" sake that can be drunk slowly without a side dish. The name "Rikou" is said to have been inspired by the staining on the costumes of Kabuki actors who were popular in the Edo period, expressing their neat faces with the sharpness of the acidity ✨. Recently, I noticed that many of the Hakugakusen brands use Japanese names for their colors, such as [Sakura-zumi] in early spring, [Umimatsu] in summer, and [Kurotetsu] and [Shiraneri] on their labels. It's fashionable to express the taste of sake by its color 😆. The 4th picture was taken when I went to the brewery to buy some Rokko. There were some brands in the cold storage that I had never seen before, so I decided to make it my next goal 💸. On the anniversary of Sake-no-wa [moon-viewing sake tonight] achievement 🌕🍶.

Thanks for your comment, Pon ✨ There are still some Hakugakusen brands that I haven't drank yet, so I don't have to worry about the "Kiri Number" 😁. At first we couldn't see the moon because of the clouds, but by the time we opened the bottle, the clouds had parted and the full moon was peeking out 🌝.
