The owner gave me some of this. It has the acidity of Yamahai, but the acidity, amino acidity, and alcohol content are all high, and the unfiltered raw sake has a harsh, grueling feel. It may be easier to drink when heated.

The brewery's idea was to use Yamadanishiki if it is to be aged. The color is also amber. It has a very soft and mellow taste. It has an exquisite sweetness with a candy-like sheen that does not go all the way to caramel. It was the most delicious of all the sake we drank that day.

This is another rare impression of a wine that has been aged for 2013BY. The aroma seemed harsh, although I can't rely on my sense of smell any more than usual due to hay fever. It has a rich sweet and bitter taste, more like an aged sake than the 2019BY we compared.

A rare aged sake from Akabu, 2018BY, apparently not from the store but from the brewery. It has a soft flavor that is typical of Akabu hiyaoroshi. The acidity is strong, which may be due to the aging process.

2018BY. modest aroma. Surprisingly, the sense of maturity and freshness is subdued. It has umami, but it is closed, clear and refreshing, and easy to drink. I would like to try it heated, as stated on the back.

The three-drink comparison continues with Kintsuko. The color is amber, as shown in the photo. The aroma is subdued. It has a matured, smoky, whiskey-like flavor, and is high in alcohol content, but the taste is relatively sharp and clean.

First sneak into a sake bar specializing in old sake to compare three different kinds of sake. The first was Genroku. Aiming to reproduce sake from the Edo period, it was made using the same methods used in those days and aged for 20 years. The color is reddish as shown in the photo. It is the sweetest of the three, and makes you want chocolate.

Inoshishi
This sakè as you can see in the last picture on the right is very dark, look like a good aged wiski or Brandy!!! The scent has a strong presence of aged, sweet cigar, everything is intense. The flavor at the first impact is round and light, but as all Yamahai has a good deepness and need to some second of patience, and then arrive the good round and intense flavor of aged, an explosion hided for more than 10 years in this bottle. Very very good!

Inoshishi
Finally I found a very good aged sakè bar. The scent of this sakè has a good presence of aged, for me is similar to the leather but a little more sweet. The flavor is very round not heavy and not light very good balanceed without any spike. Very difficult to describe but it is Awesome!!
