A rare aged sake from Akabu, 2018BY, apparently not from the store but from the brewery.
It has a soft flavor that is typical of Akabu hiyaoroshi. The acidity is strong, which may be due to the aging process.

Surprisingly, the sense of maturity and freshness is subdued. It has umami, but it is closed, clear and refreshing, and easy to drink.

First sneak into a sake bar specializing in old sake to compare three different kinds of sake.
The first was Genroku. Aiming to reproduce sake from the Edo period, it was made using the same methods used in those days and aged for 20 years.

The scent of this sakè has a good presence of aged, for me is similar to the leather but a little more sweet.
The flavor is very round not heavy and not light very good balanceed without any spike.
Very difficult to describe but it is Awesome!!
