Good acidity and lemon taste.

It is so gentle, clean, fruity and refreshing on the palate that it is hard to believe it is a 17% nama sake!
The umami flavor spreads afterwards, and at the end you can taste the slight bitterness and the richness that is typical of nama sake.
Wakakoma Miyamanishiki 70 Unpressed, Unfiltered Nama Sake
Fresh and slightly effervescent
Banana? Momo?
Very fruity, and the clarity and sharpness are so good that it is hard to believe the rice polishing ratio is 70%.
Morishima Yamadanishiki Junmai Ginjo
Very elegant and mild melon aroma.
A refreshing mouthfeel, with sweetness, umami, and sourness spreading out and ending with a bitter, clean finish.
Delicious!
Sharaku Junmai Ginjo Hatsushibori
Freshness and vibrancy typical of the first Shibori-shibori
Fruity and gorgeous aroma
But not too sweet, with a crisp sweetness.
Sharaku's flavor balance is stable and delicious.
Senkori Snowman
Fresh! Strong and pear aroma.
Surprisingly low sweetness, acidity and bitterness, and quite dry aftertaste.
Even if you drink only the supernatant, it tastes great!
Sharaku Junmai Ginjo Nagosake
More subdued and umami than usual junmai ginjos
Fresh and fruity aroma that is typical of Sharaku.
Juicy sweetness, acidity, umami, a hint of bitterness, and a good balance of flavors.
First flax cat spark.
Surprisingly, there's a lot of lees at the bottom.
The acidity and sweetness are well balanced, the bubbles are fine, and the aftertaste is quite dry.
I had it with roast beef, prosciutto ham, and cheese, and I personally thought it was a better match than a bad wine or champagne.
I would like to enjoy it with salami next time!
Miyazumi Watabune-2
Fruity, gorgeous aroma and sweetness
It has a gentler taste than the Miyazumi Yamadaho we had the other day.
I think I prefer this one because it has a refreshing aftertaste without leaving a weird aftertaste.
