Nabeten is a nationally famous brewery (or so we think) that has been in business for 336 years and has two major brands, Niiyu and Unshakable. The ginjo grade sake was aromatic and refreshing, but it was actually my first time to taste junmai. I took a sip. It has the robustness of Junmai with a slight estery aroma that lingers in the nose. The acidity and sweetness are well balanced, and the sake goes down smoothly and refreshingly. Yes, this is quite good. Oh my, it was empty in 10 minutes! It was a good sake for everyday drinking 🍶. You should all give it a try ✨

A refreshing sake reminiscent of the Oirase stream. It is light on the palate, but has a firm sake feel. The aftertaste is fuller than the aroma. The body is robust, which is typical of junmai. The ginjo aroma stops in the mouth, and the aroma passing through the nose is faint. It is a dignified, but not showy gem. I like it a lot 🫶.

Sake made with Tsuyahime sake rice. A collaboration with Tohoku University of Art & Design. Take a sip with Yukibie. It is sweet! The aroma in the mouth is slight, but when it goes down the throat, there is a faint ginjo aroma. The aroma that passes through the nose is that of refreshing rice. The mouthfeel is soft and gentle. As the temperature rises, the spiciness comes out, and the sake is drunk like water. It may be the best sake for a mealtime drink! It may be the taste that can be produced because of the good water. It is not flashy, but it is a warm sake that reminds one of the simple rural landscape of Yamagata.

Eiko Fuji after a long time. I used to drink a lot when I was a student and I miss it. First, a sip. The ginjo aroma is subtle from the lips to the tip of the tongue. The floral aroma spreads in the mouth in a short time as it permeates the tongue. A tangy stimulation is left on the tongue with a strong raw taste. The lingering aroma does not cling persistently to the palate, but disappears at just the right moment. The coolness of 16.4 degrees does not make you feel the temperature. It makes you want more and more while drinking. This may be the first time in my history that I have had a sake with such a high degree of perfection. Thoughts. Mmmm!

A robust 19% sake, typical of old-fashioned sake. It has a strong, mellow, nostalgic flavor and taste not found in trendy sake. It has been a long time since I have had such a powerful sake. It is like thesake of the old Sogen with a crisp and dry taste. It is a geninshu that sake lovers can't get enough of.

This year we started with Tateno River! The moment you put it in your mouth, it has a refreshing mouthfeel reminiscent of Mogami River. The first touch is refreshing, the aroma comes in softly, and the mouthfeel is mild. The modest ginjo aroma quickly disappears from the nose, leaving you wanting another sip. The image is that of a refined and beautiful sake. It might be good in a wine glass 🙆.

Cold: Very light, but with a lingering sourness. At room temperature: Full-bodied, flavorful and robust. Lukewarm: Aromatic without losing its ginjo aroma, and the spiciness subsides. Overall, a mellow sake with a tangy aftertaste. I think I like it a lot! The cospa is also quite good 🍶. I'm glad it's my first time out of Sake no Wa 🥹.

I went to Yokoshiba on business and stopped by. Room temperature: Soft in the mouth, with a rich bitterness and umami before the aroma. When you finish it, the spiciness comes and the sweetness remains on your tongue. Chilled: A faint aroma and sourness in the mouth. As it rolls around in the mouth, the umami flavor rolls over the tongue, and the full-bodied flavor quickly disappears. It has been a while since I have encountered this type of sake, but it is addictive 👅 I would like to drop by the brewery again, as it is not widely distributed.

When it passes through the nose, a subtle ginjo aroma follows and lingers for a while. The alcohol content is a little strong at 17.5 degrees, so this is a great sake for tasting the flavor of rice.
