Honjozo sake, which seems to be a staple at Sakeya Hachibei! It is an inadvertent version of the 🤔 upside down label, which you don't often see in Kyushu. Solid-bodied, dry, and made for a reasonable price! We had it hot.

Takayuu, a local sake from Tottori. The moment it was poured, the aroma came up in the air. At first, there was a sweetness that was typical of sake, but soon followed by a lactic acidity, and finally a crisp, dry finish. Delicious!

The first sake from Hokkaido. I had it cold. It was dry and very refreshing. It looked delicious even when heated. The taste was so clear that it reminded me of the scenery of melting snow flowing through the mountains.

Hawk's Eye: Chaos and Order. I had two bottles of regular hawk's eye and this is my third hawk's eye. The aroma is a hint of pear. Fresh impression. In the mouth, it tingles on the tongue (was the temperature too low?). It feels fresh. Pineapple comes, but it flows quickly and the aftertaste is short? Compared to regular hawk's eye, it is drier and less pineapple-like, giving the impression that it would go better with food. Delicious!

A gift. This is my first honjozo sake (sake made by adding brewing alcohol to rice and koji with a milling ratio of less than 70%). (Apparently it is a sake made from rice and koji with a milling ratio of less than 70% and brewing alcohol added.) Here are my impressions. The aroma is mild. When you put it in your mouth, it feels a little thick on the tongue. The spiciness spreads quickly and then quickly fades away. The aftertaste is short. Firmly dry!
