I think it is sweet as a sake. It's a non-filtered, unpasteurized sake, but it doesn't have a strong alcoholic taste, and it's like a sweet white wine. You don't need to pair it with food to drink it, but if you have salt to reset your tongue, you can keep drinking it. In short, it is a very elegant sake.

The information is that it is only 15% alcohol by volume. The aroma is weak, and when you drink it, the sweetness of the alcohol is strong and there is a gap in the flavor. It is not a coherent sake, but rather an alcohol with added rice flavor and thickness. It goes well with the sweet and spicy flavors of sugar, soy sauce and mirin. It's a Junmai Ginjo, so I thought it would be smooth, but it's yellowish in color, and the rough rice and acidity come out in the mouth. It's a little tough to drink cold sake. It's best to drink it warmed up. As for the snacks, it's a plump, hearty rice sake that's great to pair with a sweet and spicy soy sauce or miso-based dish instead of rice, but I personally think Iwashita's fresh ginger is the best match! I think the sourness goes well with it. Sushi is a combination of vinegared rice and sweetness of the ingredients, so it seems to go well with Sushi.

The first sip has a strong impact that makes you think it's an Alsophile. But as you take two or three sips, you realize how versatile it is and how well it goes with most of the other ingredients. The sweetness of the rice from the Yamada-Nishiki comes out and you get a good sense of "water" in a good way. In the end, it's still an honor student with the DNA of Yamada-Nishiki.
