The first sip has a strong impact that makes you think it's an Alsophile. But as you take two or three sips, you realize how versatile it is and how well it goes with most of the other ingredients. The sweetness of the rice from the Yamada-Nishiki comes out and you get a good sense of "water" in a good way. In the end, it's still an honor student with the DNA of Yamada-Nishiki.
