The Fujii family brewery is located in Shiga Prefecture, which is blessed with high-quality spring water suitable for sake brewing. The water is soft and low in iron content, which makes it possible to produce sake with a mild taste.
In addition, there are rice paddies around Lake Biwa where high-quality rice suitable for sake brewing is grown. For generations, the Fujii family has insisted on locally grown rice, and "Asahi Sun" uses "Tamasakae" and "Ginfubuki" rice grown by contract farmers in the prefecture using low amounts of pesticides and fertilizers.
