I've heard a lot about Kido, but I've never had it before.
It was a gift from a friend.
I don't often pick up Junmai Daiginjo myself, so it was the first time in a long time that I felt the gorgeousness of the sake spreading all over.
It was sweet, so it went well with Amaebi (shrimp) and Botanebi (prawn) sashimi.
The aroma was a mild but mellow fruitiness. The sweet aroma of rice can probably be felt as well.
When you take a sip, you will find that it has a clean and refreshing taste like a fresh water stream with no useless parts.
It has a crisp acidity and an overflowing flavor that does not overshadow the strong acidity.
It has an elegant texture that glides across the palate. The aftertaste is accompanied by a slight bitterness and fades away, leaving a gentle afterimage.
The same Muryosan Junmai Ginjo won the top prize "Champion Salmon" at the 2020 IWC (International Wine Challenge).
In this junmai daiginjo, you can feel the taste of the "best sake in Japan" that Heiwa Shuzo has been pursuing, and the taste of the "best sake in the world" that the world has recognized.
Please try this beautiful sake that represents Wakayama, made with Yamada Nishiki, the best in the Special A district, and the clean water of Kishu.
