Finally opened a bottle of 2023BY (made in March 2024) draft sake. It is dry, which is not typical of Tsushimaya, but I am not sure if this is due to the fact that it has been left out for so long.
The softly sweet aroma and umami of Miyamanishiki are apparent in the mouthfeel, while the slightly dry taste is refreshingly crisp. It is an excellent sake that goes well with meals.
55% Hachitan-Nishiki rice produced in Hiroshima Prefecture. Tropical aroma and juicy rice. The creamy flavor of the sake's tailings also makes it easy to drink.
