The amazake here is delicious 😊I buy it in bulk and this time I got free shipping so I also bought this sake 🍶 It seems to be a blend of junmai ginjyo and honjozo sake. I immediately opened the bottle. The color is yellowish. The nose has a lactic acid aroma with a hint of alcohol. In the mouth, it has a mild taste and is more refreshingly dry than expected due to the acidity. There is also a sensation of alcohol escaping through the nose. I paired it with grilled kosho-dai (pepper snapper). It tastes exactly like something between sea bream and chicken grunt. It goes well with the umami of this fish. ❣️The acidity of sake softens and the umami of rice increases. Sake goes well with it. ❗️ The rice used to make this sake is Asahi rice.
