Kibi no Ginpu Junmai Ginjo Okayama Omachi

Light ginjo aroma with a hint of bitterness and rubbery aroma. In the mouth, there is a thick sweetness. The acidity is followed by a lingering sweetness and a full-bodied flavor. The taste is typical of Omachi, but the rubbery aroma is a minus.
In Bizen, we tasted sake from Ichinomiya.
When I drank the Junmai Ginjo before, I had a clear and light impression, but the freshly brewed Genshu was a bit smoky and had a rich flavor.
Personally, I think I prefer the original sake.
It was a mellow, mellow, and delicious sake.

We bought it at the spring brewery festival. A thousand yen is reasonable for a sake of Junmai Ginjo specification.
The Amabie label is full of handmade feeling. I hope the corona disaster will go away soon.
The taste is very light for a sake from the south of Okayama Prefecture. The clean and moderate taste seems to be well balanced with food.
My personal preference is for a more mellow, sweet sake, but I think it is a beautiful sake with a flowing, orthodox taste.
