A luxurious product with a clear, uncluttered taste. This daiginjo-shu is made by brewing all the rice with Yamadanishiki (Y), Kumamoto yeast (K), and YK35, which has a milling ratio of 35% (35), and then using the limpid Kumamoto underground water to make the sake. The unpressurized pressing gives the sake a delicate and refined flavor with no cloying taste.
