I have been working in Mito more and more, and I would like to take this opportunity to enjoy sake from Ibaraki Prefecture. It seems to be clear and dry, but has a bit of umami in the aftertaste? It has a bitterness? It is not like water. I will drink it while eating sashimi.

It is not at all harsh or spicy, but it is light and dry. It is a light and dry sake, but you don't feel any bitterness or spiciness.
