This is also the H16BY (2004) Yamasan Masamune from the anniversary menu 🍶.
It was served cold.
The nose has a slightly caramelized mature aroma.
It has a slight matured taste on the palate, but you can catch a glimpse of the daiginjo-style of a solid brewery.
It's 20 years old, but if you usually drink robust type of sake, it may be just right.

The first Yamasan Masamune was a heated H30BY. It was procured in Shimane.
The color is a pale yellow. It has a soft candy-like sweetness and umami with a good sense of maturity, and it is sharp with the acidity of Yamahai. It is delicious.

Yamasan Masamune, which I am not familiar with.
I ordered it with no hint that it was a sake from Shimane.
I thought this would be the usual Tekkamen, but the mild umami was unexpected.
The contrasting, strong pungent spiciness that lasts from beginning to end is a new sensation.
I guess you could call it "super spicy, mildly umami.
It is delicious in its own way.
It seems to go well with various dishes from sashimi to rich simmered dishes.

I had a drink with my wife at a nearby bar.
The first drink was a local Izumo sake, Yamasan Masamune.
It is a San-in style sake with a good taste of rice and a sharp taste. 🙆♂️
I had it with sashimi of tuna and it was delicious!

The color is yellow. The aroma is mild and refreshing without being peculiar.

Hiro-san, when I saw Nemuchi-san saying nice Masamune, I wanted to say it too, and when I looked in the fridge, I noticed that there is Yamasan Masamune😍.
I bought it when I went to Keihan Department Store with Nemuchi after the tasting!
It's sweet but has a heavy mouthfeel.
Maybe it's because it's blamed? The taste is a little complex.
A little bit of a kick at the end. Even though it is sweet, you can feel the Sanin Sake character.
Like the previous Yamasan Masamune, the sweetness is not heavy and reserved, even if the sake level is -1.
