Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". I purchased it along with Hime-Nadeshiko when I visited Shiwa Sake Brewery. The aroma is subdued, with a hint of grain aroma, and has the atmosphere of a traditional sake. We visited the Shiwa Sake Brewery, which brews Shiwa Sake. Although they do not make sake at this time of the year, they showed us their brewery and gave us a detailed explanation. We were very impressed by the earnest and simple personality of the owner. He told us that he has been receiving a lot of inquiries about Murasaki Sake recently, so he does not keep any stock of it in the brewery. I have had many brands of Murasakiu, but this is the first time for me to try Hiroki. I was told that while Murasakyu is brewed in a fast brewing process, Hiroki is made using a method called "sanki kokyu kyo yeast. Hiroki is named after Kiheiji Hirota, the founder of the brewery, with the aim of creating a sake that will be appreciated by a wide range of people. This Hime-Nadeshiko has a light fruity aroma of strawberries and pineapple, with a sweet mouthfeel and a good amount of acidity. It was a delicious sake that was very easy to drink, with a slight woody aroma passing through the nose as you drank it! Thank you for the treat!

I often see this sake at izakaya (Japanese style pubs) and liquor stores, but I don't actively go there. I took a sip. Indeed, the flavor spreads smoothly in the mouth. Yes, it is delicious.
