It has an astringent and somewhat vintage flavor, and the richness of the unpasteurized sake gives it a dry and refreshing aftertaste. It was delicious with Camembert cheese, but it would also go well with seafood.
I prefer a more robust sake that has been exposed to air at room temperature, so a heated bottle to develop its character would be nice, but I finished the 300ml bottle before trying it.
The sake brewery where the movie "Ginzuru Hashitachi" was filmed. It is nice to drink a classic sake while thinking about sake brewing in Hiroshima.
