Nitoshi Junmai Daiginjo Aizan 48 Fire
Memorandum
This is beautiful.
Calm and sweet. The end is spicy.
It has a clear yet robust flavor. The 16% content may have contributed to the good balance.
As the temperature rises, it becomes mellow and thick.
Delicious!
As per the concept of "Ni-Utsu" sake, it has a rather rough taste. Polishing 80% Aizan, no sweetness, acidity is gusto.
Polishing ratio 80%, alcohol 15%.

Ni-Rabbit is one of my very favorite sakes.
But today's Ni-Utsuri is very sweet! But today's Ni-Rabbit is very sweet! Is that why?
I paired it with sukiyaki, and it was delicious.
For a moment, it seems to be a peach, but the aftertaste is sweet like a pear. Then there is a hint of bitterness. It is thick, but also has a lightness. It is a good sake.
First time to drink Niwo🤗It smells like a ripe, matte ginjo aroma. When you drink it, you can feel the richness of the rice and the refined sweetness of Aizan in the smooth mouthfeel. ☺️The theme of this year is 80% low-polished rice, so that's why it's so rich 🤔🤔🤔It leaves a rich sweet and spicy taste and pulls it away. I'm not sure if this is a good thing or not, but it is a good thing to drink it again on the third day to enjoy the changes 😁😁😁...I left it to enjoy the changes 🍶.

I was in the vicinity of Fukushima station on a business trip.
Since the 222 check-in was the first number in a row, I decided to try Erwu, which I had been curious about for some time.
I thought it would have a strong umami flavor due to its low refining rate, but it was a very refreshing sake.
Maybe because it has been a few days since it was opened? I could taste a little more flavor right after opening the mouth, but the impression I got was that it was super dry.
It is hard to believe that the alcohol content is 15 degrees. The sensation is only about 7 degrees of alcohol.
It was very easy to drink, but it was interesting to see the difference from the usual Ni-Rabbit.
Good morning, um!
Congratulations on your 222 check-in 🎉.
I'm looking forward to drinking at Erwolf's in Ni-Rabbit with the 2 connections 🎵.
I'd like to have a slow Ni-Rabbit house drinking again: ⤴️
Keep up the good drinking 😊.
Congratulations on your 222 check-in, um 🎉🎉!
I like the fact that you are preparing two 🐺 ✨I'm curious because I've only had two 🐰 🐺 and they have different flavors!
(4) the fourth cup
...Delicious, no sense of sake in a good way.
The kind of drink that makes you drink too much. As expected of the two hares.
The result of the comparison of 3 KTs: a straight line to fruity with no cloying taste! Image for beginners.

The mouthfeel is slightly fruity with moderate sweetness. From there, acidity and bitterness are assertive. The lingering aftertaste is juicy and astringent with a touch of spiciness. Delicious. I drank it with chocolate and it was good. It would go well with figs or cream cheese.
The 61st bottle of home brew in 2024 🍶.
This is a summer-only bottle called Satin 🐇 from my hometown, Aichi Prefecture.
It comes in a rare 500ml narrow bottle. The blue bottle is fresh and summery! I drank it in the fall 🤣.
It was delicious 🤤.
My favorite degree ★★★★⭐︎⭐︎⭐︎
Sweetness with acidity and umami, followed by a bit of bitterness and sharpness.
I have never had such a feeling before.
It might go well with strong Japanese food.
I want to buy the other two hares, too!
