Terroir of Okazaki 🍶 Junmai-shu brewed with "Manzai rice" produced in Okazaki at a milling ratio of 70 I think I could taste some bitterness.... I think I can feel a bit of bitterness... It doesn't lose its edge on the second day either... It doesn't seem to be round. Is it good as a food sake? It's different from the Jungin I drank before... a little disappointing... sorry...

I'm going to open a second bottle of this one tonight because I don't want to waste my Collage 💁. The second bottle is a Junmai Yamadanishiki 65 Fire 2024BY✨. I think it's been a while since Nito-san has had a bottle. The name sounds like Tanaka Sixty-five 😆. The aroma is not matured at all, but it has a strong matured aroma like caramel or tortoiseshell candy 😅 The taste also has a momentary acidity, but the sweetness of matured sake spreads and I was surprised that such a matured way of making sake was possible 😲. I think this sake is better to drink at room temperature or warmed up than cold sake. ☺️ In fact, when I warmed it up a little hot, the maturity disappeared and the rice flavor and acidity of junmai sake stood out, which is definitely my favorite flavor 😋. I'm going to enjoy the oxidation and temperature over the next few days 🙌

Luckily to have the introduction of this sake from the owner of this shuzo. While it may be of less sweet taste compared to the sake from same label using other types of rice, but it can demonstrates the rice sweetness. It also comes with rich but pleasant sourness which adds layer to the sake. Long lasting after taste which is surprising and good!

The aroma is sweet, but the taste is slightly spicy mixed with more spiciness than sweetness. It has a slight sourness, bitterness, and a gaseous taste that refreshes the palate. I would like to try it with more intense flavored snacks.

I bought this one just for the sake of saying "Congratulations on your 10th anniversary! Even though it is fire-aged, it is a Daiginjo Futato, as expected, and very good!
