I met Souhomare on a one-day trip to Tochigi (Moka and Mashiko) I took in the first half of this year's GW.
I got the special junmai sake with the "nama-hashime" brewing method during the first half of this GW and drank both the hi-ire and the nama sake,
This time, I got the non-nama-hashiroshi sake.
The impression is basically similar to that of the non-new brewed sake, except for the acidity.
It has a dry, limpid taste with a calm quality and a fine umami, and the impression is that it was carefully brewed with good rice and water.

Souhyo's midsummer Junmai sake, which is shipped around the time water lilies bloom.
It has a banana-like fruity aroma and umami flavor, but it is also crisp and refreshing.
It is very affordable, about 1,300 yen for a four-pack! Thanks to the effort of the brewery.
The second drink at our favorite yakitori restaurant was Souei Shuzo's Souei Shin Junmai-shu.
The label says it is a Tochigi Prefecture sake.
This is probably the first sake from the brewery I have ever tasted.
First, the aroma. There is no particular aroma.
In the mouth, you can feel a refreshing spiciness.
And while it has a smooth mouthfeel that is uncharacteristic of junmai sake, it also has a complex flavor that is unique to junmai sake and is very delicious.

This is "Shimadaya Sake Shop MIYAMIRAI".
We had a quick drink while waiting for the Shinkansen.
Time is limited, but I want to drink a variety of sake, so I chose the Tochigi sake 3 kinds comparison.

The rice used for the sake is 100% Yamada-Nishiki from District A.
I am sure the special A district is from Hyogo Prefecture.
The color is clear.
There is a faint scent of rice.
The taste has the umami of rice, plus a bit of bitterness.
