We opened a full bottle of Niigata Sake at !!!!
This is a limited time only bottle of Hishiko, a modern brand from Mine-no-Hakubai.
It is 100% Dewa Sanzan, and the green bottle is very intriguing.
It is unfiltered and raw, so when poured, a fine carbon dioxide gas rises.
The aroma is sweet, like boiled sugar, and tart, reminiscent of plum fruit, which makes the back of the tongue squeak.
In the mouth, contrary to the aroma, there is no sweetness at all.
The plum-like sourness in the aroma has a slight sweetness as a base. The mild umami characteristic of Dewa Sanzan can also be felt. Then the pungency of the alcohol comes in and it quickly cools down.
The pungency of the alcohol is the key point. It is not a pungency that makes you feel hot, but a pungency that seeps out of you in a flash, which is well combined with the acidity that is the charm point of this sake. It is not juicy, but it gives a sense of depth to the acidity.
The aroma is extremely sweet, but when you drink it, the flavor is firm yet crisp, and this gap is what I really like about Hishiko.
This is the best sake that combines charm and the identity of Niigata sake.
I love Niigata sake.
The aroma and mouthfeel are mild, but the mid-palate is quite sweet, acidic, beautifully fruity, and has a strong umami flavor.
The aftertaste is light and fresh like new sake.

I wanted to learn to appreciate the taste of dry sake, so I was attracted by the pop-up that said "Sake brewed with the aim of achieving both a dry taste and a mellow aroma" 🤗.
I opened a bottle of this one, which would go well with grilled fish and nabe (hot pot) dishes tonight! The mouthfeel is soft and full of flavor, with a hint of apple. It has a slightly classical aroma! I can't deny the feeling that I'm drinking sake 😅The mellowness is a little far away.
When paired with a meal, the harmony with the umami of the rice and the breadth of the flavor is UP⤴️ good to drink in a natural way without being overbearing 😚.
I added shrimp oil to my lunch tsukemen, but I wish it was shrimp puree 🙄...

The fact that it was given to me by a senior who likes sweet sake means... it's still sweet! It has a strong sweetness. It has a nice aftertaste with acidity and a hint of gas.

I had been wanting to try this sake for a long time, and when I saw it at Yoshino Sake Shop, I couldn't help but buy it. It has a slight yellowish appearance. The top aroma is moderately fruity. In the mouth, it has an elegant sweet and sour fruity taste, followed immediately after by umami. Compared to Dewazakura "Yukimanma", which was drunk at the same time, the taste is very similar, but the mellowness is moderate and smooth. However, both are delicious and dangerous sake that can be drunk without limit.
The fresh pear-like aroma and the full, slightly sweet flavor will easily slip down your throat without tiring.

I've been drinking nigori recently and wanted to try a dry sake.
I had never heard of it, but a local liquor store recommended it to me and I bought it on the spot. ✌️
It went well with Osechi (New Year's dishes) 🤗.
