Hishiko Junmai Dry.
Tasted and was surprised at the taste, which is not at all like Niigata, it is dry.
I will do it with spiced grilled shiitake mushrooms ^_^.
Today we went to Shuraku in Takadanobaba, which is closing at the end of this month. I heard that they are considering relocating and making a fresh start, so although it will be sad for the time being, I wish them the best.
The first one is Hishiko Junmai DRY from Niigata Prefecture. It is dry but softly sweet, and the bitterness that spreads slowly is pleasant.
Sake that was recommended to me by a junior colleague because it was made in Niigata by the toji of Sharaku.
It is similar to Mimuro Sugi's Natsujun or Gohashi's Jyu, isn't it?
It's 16% alcohol and has a strong alcohol content.
It is sweet, tasty, refreshing and soft.
Is the softness due to the fact that it's a draft sake that has been aged on purpose? I was surprised to see the production date is December 23rd 😳.

Slightly pungent, but blends well with food without any cloying taste.
It tastes sweet depending on the dish.
It is a beautiful sake. The color is a little yellow.
Pungent aftertaste, in a good sense, disappears quickly.
