The second Utsunomiya petit expedition is to visit Ame-go-Tsuki. Yes, I mentioned the other day that I've never had a Hiroshima brand, but I've never had it before.
Unlike what I imagined, it is quite dry. The acidity and the aftertaste were nice. Hiroshima brand is rich in individuality.
At Taji @ Gotanda. Not a ginjo-shu, but melon aroma. Clean and easy to drink. Serve with firefly squid liver salt. Alcohol 16%, Polishing ratio 60% koji rice, 65% kakemai rice. Made with Hachitan-Nishiki.

The palate is clear and free of clutter, with a fine, bright sweetness and a white wine-like stimulation of acidity and astringency. It has an elegant, jewel-like clarity and a balance of sweet and savory flavors that are not overly broad. The lingering astringent taste comes as if to tighten the taste, which is pleasant, and the cleanness of the wine disappears without any change. This is a pure Dai class gem ✨.
