Koryu Gen unfiltered unpasteurized sake
Sweet and tasty, easy to drink.
The aftertaste is bitter and astringent (right after opening the bottle).

Niigata sake is synonymous with light and dry, but this one has a fruity, smooth, dry finish that makes it perfect as an evening drink. ‼️
The label is also eye-catching with its glossy red color and cranes. It is an arugula-soaked sake, but I would like to try it again. ❗️
The fruity and juicy aroma, the sweetness is firm, but the astringency of the added alcohol finishes it off in a nice salty way. 18% is a high alcohol content, but you don't feel it.
Slightly thickened and mellow on the tongue.
The bitterness comes along with a rich sweetness.
After drinking, it disappears smoothly.
A tingling sensation is left on the upper jaw.
Not so strong.

My first sip gave me the impression of a slightly sweet but clear, spherical, glassy sake that disappeared. But when I drank it after tuna sashimi or liver stewed in sweet and spicy sauce, I thought it was quite a powerful and gorgeous sake.
I served it with tuna sashimi (kama and red meat), braised liver with sweet and spicy sauce, and green leaf and radish salad!
