Third set of sake comparison 😅
It is a refreshing dry sake with a fruity aroma and pleasant acidity in the mouth.

Since my alcohol capacity was close to the limit, I asked the master to choose my favorite drink for the last one. ☺️
And this was the most delicious and shocking drink I had that day 👀.
The top nose and hint of aroma was a beautiful melon-like ginjo aroma 🍈.
It fulfills the requirements for a delicious sake with a good balance of sweetness, umami, and acidity, with a noticeable sweetness, but not too much, it's like a beautiful sweetness that you can't stop drinking 😊.
It has a little bit of gassiness and a chili feeling, but because it is fire-aged, it has a juicy impact, although it is not quite a "sizzle"!
The aftertaste is clean and I didn't notice any bitterness or other unpleasant tastes ✨.
If you like sweet and tasty, this is a cup you should definitely try!
The level of Chiba Prefecture's sake is also very high, like Kangiku's!
I have another sake brewery to recommend!
Good evening, Chiesta 😃.
I've passed by Koizumi Shuzo's brewery in Higashi Kaimori and it's a modern sake 😳 There are a few breweries in Kururi, but I have to rethink my way of thinking about this 😅 thanks for the reminder!
Good evening ichiro18 🌝.
I understand why the regulars at my favorite bar were giving Koizumi Sake Brewery a big thumbs up that they will break out in the near future 👀.
No, no, no... 🙇♂️ You must try it 😋!
Tokaimori Junmai Ginjo Susuki
Rating 4.4-4.5
Alcohol: 16%, Rice: Omachi, Polishing ratio: 60
After hi-ire, the flavor is brought out by slow aging at low temperature. The mild aroma derived from the rice is combined with a mild and gentle umami and acidity in the mouth, and the slight feeling of gas is pleasant. It has a fruity taste. Pear-like. Light.
Today I found this at Senmaru-san (Ras 1 notation).
It is Higashi Kaimori from Koizumi Sake Brewery in Tomitsu, Kamisou Province.
It has a dry, sultry aroma, I guess it's dry. ⁉️
It tastes like citrus fruits (mandarin oranges?) and is refreshing.
It tastes like citrus fruits (mandarin oranges?) and has a refreshing sweetness.
It has a sweet and sour taste, but it has a nice sharp taste.
This is a winner!
Senmaru's web site also says that they are a new brewery!
Rippi, it looks like it will be a definite.
(But I'm a little scared of the roads in winter)
thanks Jishu Senmaru (Ezo:Sapporo:Ishiyama)
It's time for autumn sake.
Quintessential Chiba brewery.
Good mouthfeel, gorgeous and slightly sweet.
The pull after this is a wonderfully dry feeling.
Ingredients: rice, rice malt
Alcohol content: 16
Rice type: Omachi
Rice Polishing Ratio: 60
When I opened it, the cork made a nice sound.
But there is no schwarziness.
The bitterness comes running from the sweet and sour part, but it doesn't come in front of your eyes.
It was a delicious bottle, though it felt a little unsatisfying.
Rice polishing ratio 55
Alcohol level 16%.
