Since my alcohol capacity was close to the limit, I asked the master to choose my favorite drink for the last one. ☺️
And this was the most delicious and shocking drink I had that day 👀.
The top nose and hint of aroma was a beautiful melon-like ginjo aroma 🍈.
It fulfills the requirements for a delicious sake with a good balance of sweetness, umami, and acidity, with a noticeable sweetness, but not too much, it's like a beautiful sweetness that you can't stop drinking 😊.
It has a little bit of gassiness and a chili feeling, but because it is fire-aged, it has a juicy impact, although it is not quite a "sizzle"!
The aftertaste is clean and I didn't notice any bitterness or other unpleasant tastes ✨.
If you like sweet and tasty, this is a cup you should definitely try!
The level of Chiba Prefecture's sake is also very high, like Kangiku's!

After hi-ire, the flavor is brought out by slow aging at low temperature. The mild aroma derived from the rice is combined with a mild and gentle umami and acidity in the mouth, and the slight feeling of gas is pleasant. It has a fruity taste. Pear-like. Light.
Today I found this at Senmaru-san (Ras 1 notation).
It is Higashi Kaimori from Koizumi Sake Brewery in Tomitsu, Kamisou Province.
It has a dry, sultry aroma, I guess it's dry. ⁉️

Quintessential Chiba brewery.
Good mouthfeel, gorgeous and slightly sweet.
The pull after this is a wonderfully dry feeling.

Alcohol content: 16

When I opened it, the cork made a nice sound.
But there is no schwarziness.
The bitterness comes running from the sweet and sour part, but it doesn't come in front of your eyes.
It was a delicious bottle, though it felt a little unsatisfying.

I bought this on a visit to a brewery😁.
It has a light pink 🍑 color as it seems to have a peach colored yeast.
It is an apricot type sweet and sour with a viscous sweetness and heavy acidity.
The water throat feels sharp, and the balance between the viscous sweet and acid and the spicy throat is the best 🥰.
Refreshing yet satisfying. ⤴️
