Tonight's accompaniment is a bottle of this one. When the bottle is opened, the aroma is not so much floral as it is ricey. In the mouth, you can taste the strong flavor of the rice, just as the aroma suggests. It is 100% Yamadanishiki, but the taste is a little different from what I expected. However, today's main dish is an eggplant keema curry, so it might be a good match. The first was potato salad with iburigakko (pickled ginger). The acidity of the mayonnaise, combined with the smokiness, calms down the strong taste and makes it easier to drink. When paired with the eggplant/basil/cream cheese deep-fried spring rolls, the sweetness and flavor of the rice stand out and are delicious. Not rice, but heavy European-style bread. The weak acidity of the bread and the spices flowed nicely, which was nice too. The first bite was too strong, but I think the pairing was right.

Tenge-Nishiki Junmai-Ginjo Nama-Nara Sake
This is the first Tenga-Nishiki, a connection with yesterday's "Shikishima".
It was recommended by an acquaintance who is the owner of a sushi restaurant in Mie Prefecture, so I happened to find it at a liquor store and brought it home.
I brought it home with me by chance.
When the bottle was opened, there was a short gas sound.
The aroma is mild and not much when it is served in the refrigerator.
When chilled, a fresh, clean acidity that is not too sour, just tightens just right on the tongue. It is citrusy (lime) like.
At first, I thought the clear and light feeling with only beautiful acidity was not enough, but as the temperature rises a little, I can taste a slight umami after swallowing, and the acidity and umami are the best match.
There is a sweet richness before a slight spiciness in the aftertaste, and it is refreshing yet slightly delicious.
This sake is made with care and attention to detail, and even though it is not spectacular, it is still a wonderful sake.
The brewery's toji, Seijiro Hane, who is of my generation, was born in Nara and grew up in Suita, Osaka, and is a former system engineer who graduated from Kyoto University.

Sourness and umami are strong. Citrusy 🍊 with a sharpness ✨. But my wife said she didn't feel so much acidity. Maybe it's because it's paired with flounder with roe.

This is my first time drinking Tenka Nishiki ✨This is delicious 😋It has a gentle sweetness, a good amount of gas, a moderate aroma, a subtle bitterness in the second half, and a nice sharpness👍.
