At room temperature, it has a mildly matured taste and a clear yet full-bodied deep sweet umami flavor, but it also has a sharpness with the acidity of the sake. It has an excellent balance that makes you want to match it with boiled fish.
When heated to 50°C (50°F), the sweetness and sharpness increase and become more balanced. If you want a gentler sake, go for room temperature, but if you want a punchier sake, go for warmed. Safe bet would be room temperature.
I found it in the extremely cold refrigerated room of Yamanaka Sake Shop.
I was curious about the Banjo Kotobuki that Wakata-san was drinking, so I bought it without a second thought.
It was a sake brewery in Namie Town.
I was so grateful to be able to drink sake, and I was so happy to have it.
The sweetness was so refreshing that even I, who am not fond of kijoshu, could drink it in large gulps.
The alcohol content of 7 degrees Celsius is the same as not having it at all 🤣.
It was an instant kill 😊.

On the evening of the 15th, after finally landing in Miyagi, my original return trip, I enjoyed a sashimi platter from my parents' house and a bottle of freshly squeezed Banjo Kotobuki (Shiboritate) that I had picked up in Fukushima.
The goal of this series of large fishing flags is to represent the local way of life.
This azure has a light rice aroma and smooth mouthfeel. The slight sweetness contrasts pleasantly with the bitter astringency of the ori. In a word, silky, bitter and light. The acidity is fluffy and the pungency is moderate. It is perfect with sashimi, delicious 😆💕.
This is also a sake that was highly recommended by the son of Konno Sake Shop, near my house in Osaka, so it was understandably delicious 😋.

Sake made with Association #3 yeast. I bought it because it is interesting.
I don't know if it is a characteristic of the No.3 yeast, but the aroma is like a distilled spirit and it has a wild body.

The taste is very good with a good balance of sweetness, sourness and spiciness. However, as you drink it, the spiciness wins out and becomes a little stronger.
It is a perfect match for a soup curry, but it is still good.
It is a light, crisp, and refreshing sake. The label says it is inspired by the summer sea, and it certainly has that flavor. Surprisingly, it went well with soup curry. ★★☆☆☆

The master left in a hurry because there was a liquor store in the neighborhood that he wanted to visit. When I asked him about the situation, he told me that he used to run a liquor store in Namie, Fukushima Prefecture, but after the earthquake, he came to Osaka where his relatives live and started a liquor store in our neighborhood. It was very stylish, a liquor store in a home. The store was filled with wine and mainly Iwaki Kotobuki sake, as the son had worked at the Namie warehouse of Iwaki Kotobuki.

We were looking for a bottle of Banjo Kotobuki made with white malted rice, but they didn't have it. Instead, they brought out a bottle from the back that was also made with white malted rice and was planned and developed by a staff member who enjoys running marathons at the Namie brewery😍.
The aroma is elegant Banjo Kotobuki itself. The first sip is softly tinged with citric acidity from the white koji malt. I thought it would be more sour, but it was a gentle sourness. It was so delicious that I couldn't stop drinking. Of course I drank it all up😅.

Hi Hirupeko, Good evening 😃This runner's high was so easy to drink 👍😋 I was told that it was from last year, so I did feel that it was a bit mildly sour. I'm not sure about the source of your husband's information either 😅.
