Sake we received as a gift. It was a very hot day, so I opened a mouthful thinking it would go well with Komoro soba noodles and yam. The aroma and mouthfeel were fruity, but it was dry and crisp.
The rice feels fluffy and soft, just like freshly cooked rice.
The gentle sweetness of the pesticide-free Koshihikari rice gradually sinks in.
The sake is naturally finished by "plain filtration," which lightly removes only the lees from the sake and leaves the rest untouched.
This is why it is so appealing to be able to taste the original flavor and aroma of the rice!
It was a warming drink that would be a perfect accompaniment to dinner.
The president served me yesterday's evening drink 🥰 kindly!
I took a sip and was surprised.
Even though it is unpolished, there is no roughness at all, but rather only gentleness.
The sweetness of the rice spreads softly, and the taste is mild.
There is a slight sharpness to it that makes you want to take another sip.
The more I drank, the more I felt it sink in, and when I realized it, my heart was relaxed.
If you drink it lukewarm, you'll be enveloped in a gentle umami flavor like rice soup stock, and you'll find yourself saying, "Ahhh, I'm so happy.
It was the perfect reward for a leisurely evening drink.
Sake that tastes like many different things, a sake that overturns the concept of the current sake fad. Dare not to cut the rice. The flavor is amazing.
Dignified and fruity.
Crisp texture with surprisingly sourness in the bottle.
From banana apple, surprisingly clear rice flavor.
The drinkability is very good.
Taste: 3.5/5
Even with a 91% rice polishing ratio, it is a juicy junmai sake with no cloying taste. The brewery's recommendation of heating it up is good, but I prefer to drink it cold for a refreshing drink.

Acidity / 2.0
Purchased at a tasting sale at Hanshin Department Store
First time drinking Shinanonishiki
I hear it is an environmentally friendly label-less design.
The rice is Yamae Nishiki with a milling ratio of 71%.
The milling ratio varies from 71% to 75% depending on the year's harvest.
There are a few bubbles in the glass.
The flavor is sweet and fruity, but the rice is also strong and powerful. The beautiful acidity accentuates the taste and is very impressive!
The sweetness is even more pronounced than when we tasted it, and it's delicious.
It tastes nutty when the temperature rises.
The 4th one, after drinking Yatagarasu, my recommendation is full of Nara sake 🤣.
Overall, there are a lot of ★'s 🤣.
Miyajima Sake Shop
Shinanonishiki Chogen Junmai Sake Hi-iru Sake
This brewery is located in Ina City, Nagano Prefecture.
Ina City's specially cultivated "Yamae-Nishiki" rice is polished to 91%.
After opening the bottle, re-cork it and shake it up and down 11 times.
and shake it up and down 11 times to complete the bottle. Because the rice is milled at a low level,
The flavor may be more settled.
It has a gentle grain aroma, soft rice flavor, moderate acidity, and a full-bodied, lingering taste.
soft grain aroma, soft rice flavor, moderate acidity, and a full-bodied aftertaste.

First time drinking Shinanonishiki: ❗️
From the simple label with 71% polished rice ratio
I imagined it to taste like a classic 🤔.
When I opened the bottle, the aroma was fruity ‼️
The taste is smooth, sweet and juicy 😃.
It also has a nice aftertaste with a hint of bitterness👍.
It seems to go well with a variety of meals 😊.
I haven't had this dark flavor in a long time.
I love it ❤‼️
The costuming is great too 😃.
I might buy a bottle 🤔

Haven't had a Shinanonishiki recently?
I thought it was sweet, but it's very dry.
As you might expect from the slightly yellowish color, it's a solid dry sake with a bit of maturity.
It's delicious with darker dishes, so it's a good match!
Shinano-Nishiki, which I had avoided because of its dry image, was at the Hanshin Department Store, so I was allowed to drink a variety of it!
It was my first time to drink 😁.
Chogen Hi-iri
It tastes slightly sweet, and you can drink it all the time with its mild and gentle taste.
Chogen Nama Sake
A little rougher than Hi-ire.
Personally, I preferred the hi-ire version.
Ippou Nama Sake
I thought it was dry and sharp.
I could drink it myself during dinner.
Tsuenzaburo Nama-nazake
I was looking for this one. It was delicious with a strong flavor and moderate sweetness 😋I bought it!
JDG01
Sparkling sake. It's like champagne with a sweet and sour taste 🍾.
Delicious in a glass of wine - they said it won an award.
Junmai Daiginjo Hibana
Sweet and juicy and delicious 😋.
All the Shinanonishiki were delicious, but this one was my favorite!
Junmai Daiginjo Kinshu
Polishing ratio 39%, aged for 27 years😳.
It seems they only serve it at events and you can't buy it at the brewery!
It has a beautiful taste that you can't believe it's 27 years old, and there's a trace amount of maturity. Someone buy it 🤣.
Sake with a robust flavor.
It has a strong sweetness that makes it easy to drink.
It goes well with rich snacks.
I served it with simmered pork belly and radish.
★★★☆☆☆ Plus
The reason why there is no label is because it is a gift from a related person.
