The milestone was a limited edition Kamotsuru sake 🍶 that I bought at the Saijo Sake Festival 😀.
This sake 🍶 was available for paid tasting, but I didn't have enough time so I didn't taste it and bought it outright 😄.
It is a sake 🍶.
When you open the bottle, a soft sweetness wafts through the air.
A light, mild sweetness 😌.
The sweetness is fluffy like cotton candy, but also supple, reminiscent of watermelon🍉 ☺️
And a little sourness behind the sweetness.
The mouthfeel is rounded, and the ginjo aroma is rich and fluffy on the nose🥰.
Day 2: ✌️
I felt the acidity got a little stronger, maybe it was more cohesive on day 1 🤔.
And it emptied just like that😅
This is the end of the Saijo section 🙏.
I hope to go back next year for the sake festival 😄.
I would also like to visit Saijo when it's not a sake festival 🤣.

I'm totally into the maniacal direction 😆 I was interested in the Misuzu hot pot 🍲 but didn't have a chance at the sake festival, I'm thinking of going to Saijo again to try it 😁.
I ordered it thinking it was a junmai, but it was actually a honjozo.
It was really delicious, with a moderate umami from the first sip to the last, and a slight dryness that accentuates the flavor profile.
It is a bit like a sharper version of the Shirakiku from Okunoto the other day.
It may not be enough on its own, but I think it goes well with gently seasoned dishes.
After the fruity taste, I felt a strong tang of alcohol, but surprisingly the alcohol was not high, and the bitterness after the sweetness was pleasantly sharp and easy to drink.
Alcohol content: 14% or more but less than 15
Rice polishing ratio/69
Water used for brewing: Kamo mountain range subsoil well water
It is a very simple sake. Light and cool water, subtle aroma of rice and sweetness. It has a lightness that makes you feel no heaviness at all. And I am amazed that this quality is priced at 429 yen for 300ml. This is indeed Saijo's sake. Most good sake is expensive and not something I usually drink with dinner, but this is something I can easily buy as a substitute for a can of beer.
