This is the first time I have been to the brewery, which is rare these days.
I bought a bottle the last time I visited the liquor store. I was attracted by the 80% rice polishing ratio and the home-cultivated yeast.
I was both excited and anxious as I had no prior knowledge of the brewery.
The bottle opened quietly for a recent draft sake. The color was almost transparent.
From the moment it enters the mouth, it hits you hard! It hits you. First, there is the spiciness. Then, you can taste the bitterness.
And, after all, it is 80% polished rice, so it tastes like a mess, but you can enjoy the various expressions of the rice.
It is a classic sake, but it is not in the middle, and the sweetness can be felt, making it a perfect sake for sipping.

In addition to Korean dishes, there are Japanese dishes such as simmered dishes and maniacal snacks such as sea cucumbers in soy sauce, etc. All the snacks are delicious!

Clear and colorless
Mouthfuls of rice with a mild sweetness
The sweetness lingers in the mouth for a while.
Slightly dry aftertaste
Sake that is easy to match with anything.
Aroma of alcohol (no tingling) with a gentle sweetness and aftertaste.
It feels like an orthodox dry sake, but strangely enough, it seems less classic than the regular dry Junmai Yaichi.
I wonder if it is because the flavor structure of Manjikoto~ is simpler.

Kamerei is easy to drink, so you can safely order it at the restaurant 😁I would like to drink Daiginjo class, but unfortunately I can't meet it on a daily basis 🤣.
Junmai Ginjyo Nama-nama sake from Hiroshima Kamerei. It has a fresh taste, but with the umami of rice that is typical of Kamerei, which is typical of Kamerei.
I would like to try the dry Junmai Hachikan, which I always love to drink, as it also seems to be available.
