It has a rich sweetness, a strong sourness without being unpleasant, and a little bitterness. It has a refreshing aroma, even though it is still koji. This is rice juice. I want to drink it every year.
Note: I agree with the comment that it is similar to grapefruit. The sweetness, acidity, and sharpness are really like that. I like grapefruit, so naturally I like this sake too.
Tasting vending machine at Fujiwaraya in Sendai Station. 100 yen for a tasting. It is mellow and lightly cloudy. We also had a bottle of Takashimizu's new sake Hatsushibori and a bottle of Toraya, a Fujiwaraya exclusive. Toraya is always available, but the others are changed seasonally.

The aroma has the deliciousness of rice and the lactic acidity of Yamahai.
It was brewed in 2022, so it's been sitting for a year 🧐.
The texture is smooth and sweet at first, but the rounded acidity and clean crispness leave a lasting impression. It is quite robust when combined with salty flavors.
The sake has a Sake meter value of -18, so I thought it would be sweeter than it is,
But it is not that sweet.
I eat it with a salad of enoki mushrooms and lettuce dressed with mentsuyu, vinegar and sesame oil. Delicious✨
The fruity aroma, grapefruit-like taste and acidity made it easy to drink, and the aftertaste, like the bitterness of grapefruit, was refreshing and delicious.
The umami comes first, followed by a good soft acidity. Delicious. It has umami, but it is not heavy and smooth to drink. Hiyaoroshi" is said to have less acidity than usual.
This is the second bottle of hiyaoroshi this year. Probably this is the last.

The sweet and sour taste is as pleasant as ever. Maybe it is because some time has passed, but it has a slight sense of maturity. It goes well with the flavor of Yamahai. It is a great way to relax from the fatigue of playing in the sea.
I paired it with island sushi. It is delicious.
The island sushi is addictive and delicious. I ate it almost every day during my stay.
