Sake rice: Miyamanishiki
Mellow sake. From the moment it is poured, it has a mellow aroma! Although it is described as dry, it is very mild on the palate. It has a very crisp aftertaste. It was quite strong and sharp when served cold, so it would be good to drink it warmed.
Almost no aroma.
There is a good balance of sweetness, sourness, and richness.
No rice taste, I guess. No bitterness!

Alphabet Takachiyo is the one with different rice.
This one is CHAPTER 8, and the rice used is Dewa Sanzai.
The No. 18 yeast, flat milling, and 59% milling ratio should be fixed.
The sake had a plump flavor typical of Dewa Tsannin, but also had a fruity and sweet taste like green apples.
I like the roundness of it. It was delicious!

The balance between the firm fruitiness and the sweetness and acidity that follows is superb. It has a firm fruitiness, followed by a superb balance of sweetness and acidity.
Although it is a pure sake, it has a smooth taste and the bottle was emptied in no time.
