I went to Tokushima City via Awaji Island to celebrate the day before my wife's birthday.
Since we came here at an opportune moment, we had a chance to try Tokushima's local sake.
I have been drinking only junmai sake recently, but this is the first honjozo sake I have had in a long time.
It has a sweet and delicious taste with a slight aftertaste.
Fried scallops were served with it.

I have not had much luck with Tokushima sake,
The full swing and clean aftertaste of Hosui was new to me personally.
I've only recently become swamped with sake, so I feel like I'm missing out 😵.
I drank a local Tokushima sake, Hosui!
It has a clear, clean, slightly melon-like taste, with a great balance of acidity, sweetness, and flavor, and is extremely delicious!
It's no surprise, but I was surprised that the taste was completely different from the honjozo sake my grandfather often drank!

The same subdued aroma, gentle sweetness and firm rice flavor spreads with a crisp acidity, and the wine finishes with a moderate bitterness and a little alcohol spiciness.
It is not too spicy for its alcohol content and goes well with a meal or on its own.
It goes well with cornbread and bean bread from Biei Seisenkatsu.

The second cup is Hangsui Tokujun.
This one has a slightly old-fashioned taste.
It may be dry, but the taste is not refreshing, but rather full-bodied.
The mountain cuisine is too good to be matched with sake!
This is a refreshing "summer-oriented" Houmizu. The aftertaste is as refreshing as ever, but the initial feeling of alcohol on the palate is much less, which is good on a hot day. Wishing for the success of the Awaodori Festival starting today.
When you first sip it, you may think the alcohol taste is strong for a moment, but then it clears up and the aftertaste is refreshing. Nice aftertaste. I like it again.
