Sake made with Aizan. Sake degree -7 This is a raw version of the one we drank before. It is sweet and sour, juicier than the fire-aged version, and has a slightly fizzy taste. A little bitterness at the end. I prefer it to the hi-ire version.

Type: daiginjo, polishing rate: 50%, SMV: +5, acidity: 1.1, alc.: 15% It was on promotion in supermarket and I liked the label, so I bought it. I got it for a very good price. Aroma is fruity. Tropical fruits and fruit candy. Love it. Flavor is sweet with dry finish. Light body. Not bad but it feels like I can taste the added alcohol.

Souvenir of Saga sightseeing. The impression I had when I tasted several kinds of sake at the brewery was that it was light, but this one is a mellow type. The aroma was a bit smoky. The taste is delicious, with sweetness, umami, acidity, and a complex flavor typical of sake.
