Sake made with Aizan. Sake degree -7 This is a raw version of the one we drank before. It is sweet and sour, juicier than the fire-aged version, and has a slightly fizzy taste. A little bitterness at the end. I prefer it to the hi-ire version.

@SagaSakeDining Saga Kura Mitsutake is a sake from Mitsutake Sake Brewery in Kashima, Saga. Looks like it's near the brewery in Nabeshima. Mitsutake" is the name of the president 🙄. The initial aroma is sweet with a hint of koji malt. In the mouth, there is a juicy sweetness with a hint of sourness and a slight astringency. It was a delicious sweet sake, typical of Saga sake ✨🍶.

Absolutely refined and classy Junmai Daiginjo drink as a pre-birthday celebration for my dad. It was a wonderful night. The 35% rice polishing rate doesn't disappoint with a clean taste and fruity notes. Definitely a value buy.

Aiya Festival 2024 Spring ② I checked and it looks like this sake is exclusive to the Japan Famous Sake Association. I don't think Mitsutake has participated before, so maybe the lineup is from this year? I haven't had a spell recently, so it's been a while... Mitsutake Jungin Aaah no mama🎵 Ichidan Jikomi Aiyama🎵 It's a single-stage brewing using Aizan, with a sake degree of -30 and an acidity of 3.0, which is a sharp spec, but not too sweet. It is fire-aged, but the microbubbles give it a freshness. The acidity is impressive. The bitterness is strong at the end. The sake shop's social networking site says it has a Sake Degree of -30, but the Meimon Sake Kai website says it has a Sake Degree of -7. I think -7 is reasonable. I think -7 is reasonable. I don't think -30 is appropriate for this flavor. I think raising the temperature would increase the sweetness and amplify the lingering flavor.

Mitsutake Shuzo's sake is more commonly seen in Invitation to the Demon World and Fist of the North Star shochu. They also make sake. The aroma is of aged sake, but easy to drink. It tastes like caramel, like Shaoxing sake. The bottle and the label are interesting because they look like whiskey. 　The label says "non-blended," but I think it is blended because it contains distilled spirits mixed with brewing alcohol. I have no regrets in my life. I am already drunk. 1628 including tax
