The impression I had when I tasted several kinds of sake at the brewery was that it was light, but this one is a mellow type.
The aroma was a bit smoky. The taste is delicious, with sweetness, umami, acidity, and a complex flavor typical of sake.

I was told that this is a new sake from a new brewery, and the clerk couldn't comment on it because he hadn't had a chance to drink it yet👍.
The sake was rated -7 on the sake scale, so I imagined it would taste sweet, but it was not as sweet as I thought it would be due to the strong acidity 😊.

The color is amber. It is yellowish than I expected.
Sweet aroma.
The taste is as sweet as the description says, green apple🍏 and pear🍐. The sourness comes out in the mouth.
The mouthfeel is ultra slightly carbonated.
It is said to have a burst of flavor like a Hokuto Hyakusaiken, but it does not seem to be able to catch the secret hole 😎.

This one has an amazing 35% rice polishing ratio. You can't be too careful because it is a can.
The color is clear.
It has a sweet aroma and a slight smell of alcohol.
When you sip it, it has a refreshing sweetness.
There is a hint of alcohol, but it is overwritten by a refreshing feeling that quickly penetrates through.
It does not have the high spirit of Raoh, and is more suited to Toki, which is a kind of ibis that lets itself be carried away by the running water.
They both have a written concept and I enjoyed drinking them while reading them 😆🍶.

Wandering around the sake brewery street, I bought a lot of things at tourist sake brewery Hizenya and bought some Hokuto no Ken as a souvenir for my friend.
I 😅, who is a fan of limited edition sake, decided to buy a hi-seasoned or a nama-zake. So I chose the fire-brewed sweet sake.
Why? Why Hi-ire? Because my on-board refrigerator was full.
Sweet and softly wafting ginjo aroma.
From the moment you drink it, the mellow sweetness spreads and escapes into your nose. 😁.
Beautiful acidity tightens the aftertaste, and the sake is well-balanced without reminding you of its -11 sake level 🍶.

I drank it in a cup, so I felt the alcohol was also very strong.

It has a fresh and fruity aroma like Muscat and LaFrance, and a pleasant mouthfeel.
The slight bitterness in the aftertaste whets the appetite.
We enjoyed it with a side dish of pickled firefly squid.

This is a raw version of the one we drank before. It is sweet and sour, juicier than the fire-aged version, and has a slightly fizzy taste. A little bitterness at the end. I prefer it to the hi-ire version.

Mitsutake is a sake from Mitsutake Sake Brewery in Kashima, Saga.
Looks like it's near the brewery in Nabeshima.
Mitsutake" is the name of the president 🙄.
The initial aroma is sweet with a hint of koji malt.
In the mouth, there is a juicy sweetness with a hint of sourness and a slight astringency.
It was a delicious sweet sake, typical of Saga sake ✨🍶.
Absolutely refined and classy Junmai Daiginjo drink as a pre-birthday celebration for my dad. It was a wonderful night.
The 35% rice polishing rate doesn't disappoint with a clean taste and fruity notes. Definitely a value buy.
