Sake from Nagano.
I was looking for a sake that uses apple yeast as well, and I found this one.
It has a slight apple aroma, but the aftertaste is more refreshing than I expected.

It was purchased at the Echigo-Kenshin SAKE Festival 2023.

Nishi-Iida Sake Brewery (Nagano, Japan)
Nama-shu has a taste and aroma typical of nama-shu. It has acidity. There is a cool aftertaste.
I wondered what kind of apple flower yeast was used. I bought it.
I don't know much about yeast, but I wonder if the sweetness + coolness is related to the yeast? 🤔
I also felt a traditional sake-like sweetness and thought it was a bit different from the fruity route.

It tastes completely different from Shinshu Kamerei's Hitogochi, and since it is made with apple flower yeast, it really tasted like apples when I drank it.
It is very light and comfortable to drink. It is not too sweet, has almost no pungency or sourness, and is easy to drink, which is not the case with sake.
It is also delicious.
