This is a rather major Oita sake!
100% local Gin-no-sato is used.
Yogurt type with a lot of lees.
The sweetness and acidity are moderate, but the bitterness is strong.
Because it is a draft sake, it has a pichiswa feeling and is pleasant to the throat. ❗️
This one was chilled to the perfect temperature, so I enjoyed it a lot 😆.

The sake rice is Gin-no-sato, developed by the National Institute of Agrobiological Sciences for western Japan. This is the third bottle of sake rice research. We were careful to open the bottle. It erupted at the same time as the bottle was opened. A sparkling toast? It is good on its own. The dryness of the sake's 15% sake level comes out in the latter half of the bottle. It is the type that disappears in a blink of an eye. I can't remember the last time I tasted it.

The taste and fatty taste of yellowtail.
I thought three slices were too many
but it was gone in an instant (I tasted it properly).
It was a happy space. ☺️✨
It has been a long time since I have had sake from Oita. The aroma is strongly lactic acid-like, but the texture is quite dry when you drink it. It tasted like something a veteran would like.

The taste has the doshiri umami and sweetness typical of Omachi.
The aftertaste is slightly bitter and complex.
Last weekend we split up, Jay going to his father's place and Nobby going to his son who is not very good at tidying up his room!
Nobby traveled by train 🚃 with a large backpack 🎒 and a vacuum cleaner in another large paper bag 🛍️! The mouth of the hose was peeking out of the paper bag and if we were in the middle of G7 we probably would have been caught 😆.
It was a full day of cleaning, selection, and trash disposal, but he returned home on Monday after a day of sightseeing in Tokyo with his son on Sunday!
And here's Houjun-san ❗️ I stopped by Sake-no-Oikawa every time I visit my father's house in Chiba, attracted by the delicious looking sake, and also because I had only had Chiebijin in Oita Prefecture, so I got it on a hunch 🤗.
On Monday, I opened the bottle to celebrate our first meeting in two days!
When I opened the lid without thinking, it popped cheerfully, opened and closed repeatedly, and then it did the automatic stirring origami dance for the first time in a long time 💃.
Then we toasted! Expectations are high as the glass is filled with a sense of sizzle 😊.
I thought it would be a light drink with a hint of sweetness and acidity, but it has a dry aftertaste with a lot of gusto 😋.
This is delicious ‼️ It has some similarities to Mida Spark 👍
I was talking about how it's best to drink it at home and it was gone in no time at all 😆.

100% Gin-no-sato from Usa, orikara. It was the first time I consciously drank Oita sake, but it was delicious, both in terms of its schwakiness and its acidity.
