This is an unfiltered, unpasteurized sake with a 90% rice polishing ratio and the strength of Yamada-Nishiki preserved in its original form. The challenge of expressing an ancient sake with modern techniques has resulted in a mellow, well-honed dry taste. It has a clear aftertaste with no cloying taste, and the umami of the rice has been fully extracted. It is a clear and dignified dry sake that stands out not only when served cold, but also on the rocks or with carbonated soda.
It has a refreshing Shaoxing sake-like umami taste.

The third day was fruity.
I was not able to drink much these days, perhaps due to my physical condition. Thanks to you, I tasted 300ml in 3 days and enjoyed the changes in flavor 😊💕.

Really, it was one of those that slooooowly goes away when you realize it's gone 🥳.
The aroma spreads gently and freshly, like ripe melon or white peach. In the mouth, sweetness and acidity spread in good balance, with a freshness that makes the mouth feel as if it is popping. While it has the fullness of an ogara-mi, the aftertaste is tight, and it is a bottle that you will not get tired of drinking. It has a light, yet robust umami flavor that will go well with any dish.
The brewer is Ryutaro Miyoshi, the sixth generation of the Abunotsuru Sake Brewery in Yamaguchi Prefecture. He restarted the brewery alone after it was closed in 1983, and was previously an interior designer. He is a passionate person who started the brewery from scratch after training at sake breweries around the country with the desire to revive his family's brewery.
Miyoshi" is also his surname, a name that expresses his thoughts on "koji, rice, and water" and "seller, buyer, and the world," as well as the "three good things. The "San" on the label is designed with three 1's stacked on top of each other to express his desire to "carefully go through each process, one drop at a time.
It is fresh and friendly, yet has a core and beauty.
This is a bottle of sake that will surely make you think, "I would be happy to have such a sake by my side.
