The aroma is faintly rice and sour. When you take a sip, it is crisp, soft, but with a deep umami flavor, and the mouthfeel is slightly thick. The sweetness spreads, followed by sourness, and finishes crisp and clean with a slight alcohol taste. The aftertaste is a lingering sourness and umami. On the second day, it still has a lot of energy. The bitterness may have increased slightly. The bitterness rises softly in the sweetness and umami, and then it escapes into the nose. After the third day, it is easy to drink like water. It has sweetness and umami, and can be drunk smoothly without getting stuck. It is a dry sake with a full-bodied flavor.

The top of the label is cut off in the picture, but it is "Ginpu" 🙇🙇. A senior surveyor asked me to take him to a place where he could drink sake, so we went to the usual place. The last one I was wondering about a lot today 🤗🤗. I wanted to put Junmai sake, but it was the only one I could get... said the master! No, no, no, this one is delicious as well 😋. Kamikawa Taisetsu Junmai Sake: 1650 yen (4-pack bottle) On the last day in Hokkaido, we got this sake, which is reputed to be a delicious sake sold at SECOMA! We didn't have a refrigerator, so we had it cold (room temperature). It has the sweetness and umami of rice, and is a junmai sake. I always prefer to drink it cold, so it was not so refreshing and dry, but rather, it was just like the sake I like. I would like to drink it chilled next time.

Slightly fluffy aroma of rice The mouthfeel is quite round, and you can feel the rice from the moment you put your mouth on it. The bitterness of the aftertaste is mild yet sharp. Hirotogawa is another one, but I think I still like special junmai!

Home brew. The color is slightly yellow. At room temperature, it has a mellow, clear flavor and a slightly strong sharpness with a hint of acidity from the Yamahai process. Although it has been aged, it has no peculiarities and is flat and easy to drink. When heated to 40°C (104°F), the sweetness increases and it has a nice crispness, and the gentle mildness is irresistible. It is not bad at room temperature, but I personally prefer the balance of lukewarm heating.

I had a bottle of Kamikawa Taisetsu Comet 100% Special Junmai! Both the aroma and taste are fruity and quite gassy! This is my first sake from Hokkaido and it is very good! I would like to repeat it if it is available again!
