Higashinada Shuzo is a sake brewery near the sea in Katsuura, Minami-Boso. It is quite a long-established brewery, having been founded in the Keio period. They also have a brand name, Bonito Masamune, named after the famous product of Katsuura Port.
It was too hot, so I went out to Katsuura, which is known for its cool sea breeze, and bought a bottle. It is called "Narumi" and reads "Naruka". As I was warned when I bought it, "It will spew! I was warned when I bought it that it would spew!" It is a second fermentation, fizzy nigori sake. It is a summer sake with a slightly dry taste, but its beautiful acidity and bitterness, like grapefruit, give it a refreshing impression. It is considered to be a cold sake only.

The hue is a light yellowish-brown, and the smell has the richness of Omachi. The combo of juicy Oumachi texture on the tongue and the numbing sensation from the acidity is just as I expected.

The smooth sweetness is felt on the tongue, and the sublimated smell of Oumachi is already rising. The flavor has more bitterness, but it's all taken away by the Oumachi aroma.

The taste is fruity and sweet, but the acidity is predominant, as is the case with No. 6 yeast.

This year, too, a bottle as light as the "wind" arrived from a small brewery in Katsuura.
As the name suggests, it has a pleasantly clear and refreshing taste, like a summer breeze blowing through the air from the moment you hold the glass in your hand.
The aroma is soft and elegant, with a freshness like that of pears and white flowers.
The acidity, which is unique to the sake's "ikuhashimoto" brewing method, is at the core, and the balance between the gentle sweetness and sharpness is exquisite.
It also has a bubbly feeling that can only be achieved by direct bottling, and the gas that bursts with energy helps to reset your mind.
While it has the quiet and beautiful outline typical of Narumi, this year's finish gives it a greater sense of depth.
It is not simply a "summer sake," but a bottle that conveys the brewer's care and will.
