At home. First time in Gifu, Shirakawa-go. It's very thick, even among the nigorizake I've drunk. The aroma is like sweet sake. When you put it in your mouth, you can feel the sweetness of the rice and grain, and the sourness. The texture is tart and leaves a little residue on the tongue, but it's not unpleasant. I think it is best served on the rocks.

After the decisive battle in Sekigahara, we were allowed to taste the nigorigo (a sweet sake). It was sweeter and tastier than Shirakawa-go, which I had drunk in the past. The sales clerk said it would be delicious as a sorbet. The only problem is that it has to be frozen 🤔. I've been looking at the website and they have a 300ml bottle so I'm wondering if this one will fit in there.

Compared to the same Shirakawa-go Nigori, this blue label is more refreshing and shwashy. It also has a sour taste, like a yogurt liqueur. If you are not careful, you will end up drinking too much at once. I wonder how such sweetness and flavor can be obtained from rice alone. Once again, sake is a very deep drink.

A very viscous sake. The viscosity is the best I've ever had. It is thicker than drinking yogurt. The taste is classified as sweet, and the mashiness of the sake reminds me of amazake, so I imagined it would be sweet like amazake. However, it was clearly different from amazake with its strong rice flavor and firm acidity. It was a proper sake. I enjoyed it with some nukazuke (pickles). The website of the brewery says "Sake may be muddy, but our thoughts are not muddy at all".

I have always been curious about this nigorizake, Shirakawa-go. The design of Shirakawa-go's Gassho-zukuri style with a dark nigori like heavy snow falling on the lees. The emblem is the Miwa sake brewery's three-wheeled crest, which is very cool. This nigori sake is brewed with twice as much rice as doburoku! It is thick and rich! Thick and milky white color, The aroma of unrefined sake is gorgeous, The sweetness is delicious. But it is not cloying, It has a mild, moist and mellow mouthfeel, The acidity is clean and refreshing, and the rich flavor is smooth and smooth. The rich umami is smooth and easy to enjoy, It's really tasty! It will be gone in no time. It's still a smoothie, though. A rice smoothie. They suggest various ways to drink it. Drunk on Gifu's Local Sake 2024@Tokyo The second sake was Shirakawa-go Junmai Nigori Frozen Nama Sake by Miwa Shuzo! The freshly made nigori sake was frozen and stored to stop fermentation. It was a hot day, so I was attracted by the word "frozen! I've never had nigori before, so I was very excited ...... I could feel the sweetness like sweets 😋 I want to drink it chibi chibi!
