Watanabe Sota Hanpukai no Sake.
Only the top-fermentation is sweet, mildly astringent, and fruity like a muscat with sourness.
When mixed, it leaves a rough ooze on the palate.
The fruity taste is reduced but the taste is mellowed.

Today things are a little better and we go for a second cup.
The second glass is a special junmai from Fukushima Hirotogawa.
The aroma is not strong, with a slight ginjo aroma and sweetness.
It is followed by spiciness and umami, and then it quickly breaks off.
It is a delicious cup.
This is Matsuzaki Shuzo's first kijo sake.
The Sota Watanabe Hanpukai version was aged in the bottle for one year in the refrigerator after fire-fermentation.
It has a mild mouthfeel.
It has a mellow melon-like sweetness with a seme smell and a dry bitterness.
The bitterness is quite strong and not kijo-like.
