My first thought was similar! Umami!
There is almost no alcohol, and the sweetness spreads gently and disappears quickly, leaving behind the umami of the rice. miyaSweetness that is too gentle
Melon aroma on the nose

Today's best local sake.
Dewazakura🌸
I have often seen this type of sake, but this may be the first time for me to drink it.
It has a clean, smooth mouthfeel and a refined aroma.
It has a calmness that only fire-roasting can provide. miyaThe melon-like aroma comes through gently, and the moderate sweetness is enveloped by the acidity. The umami can also be felt well, making it a sake that you can't stop drinking on its own.
I like it very much. miyaAlthough there is nothing particularly assertive about it, it has a very good balance of aroma, sweetness, flavor, and acidity, and always gives a sense of stability, whether on its own or with a meal.
This is the kind of sake that makes me think that many people in Fukushima are like this. miyaI don't have to tell you... miyarefreshing and delicious
