Today it has a noro noro and forever.... It is effervescent, but feels light and smooth on the throat. It goes down smoothly, so I don't feel like I'm slurping it down. I've had it with fish, but it seems to go with everything 😅.
The aroma and flavor of red wine spreads in the mouth. However, it is still sake. The color is a pale red, and I am sure you will enjoy the color if you drink it in a wine glass.
This sake was aged in the red wine barrels used at the Takahata Winery. Sake and wine...it's a strange combination, but I felt it was in harmony.

The brewer came to the tasting. It has a fresh mouthfeel with a slight carbonation. The impression of heated sake I had in Hiroshima was dispelled. According to the brewer, it is a sweet and spicy sake. It has a melon-like flavor, with a rich sweet and sourness that spreads out, but has a nice sharpness. We bought a bottle of regular junmai for home use.

The rice is polished to 70% "Chusei Shin Senbon" produced in Hiroshima Prefecture.
It has a subtle aroma of rice and a gentle flavor of rice,
Refreshing acidity and a crisp finish.
