HAKKO" is the representative brand of Morikawa Sake Brewery in Kure City. The design represents a "big white bird" soaring into the sky. ☺️
When poured into a sake cup, it has a beautiful amber color, a faintly fruity aroma, and a round, mango-like sweetness, followed by sourness and dryness.
It is best when paired with grilled eggplant or grilled saury, which are autumnal delicacies!
A classic junmai sake with the sweetness and umami of rice and koji that can be enjoyed straight out of the bottle. We drank it at room temperature, but it is likely to have a more expansive flavor when heated.
Although it was made in 2017, there was no twanginess at all, and the impression was that it had become more beautifully rounded. I am grateful that I was able to find it through the Corona disaster from the torrential rain in western Japan in 2018.
