This is the third drink at the standing drinking chuin last Wednesday.
I was so pleased with the heated Kyokko that I decided to go for a little more warmed sake.
On the shelf at room temperature, we found Takasago.
I thought it was from the Fuji-Takasago Brewery in Shizuoka, but it was a regular sake from the Kiyamasa Brewery 😳.
I had it lukewarm (probably lukewarm or top-heat).
The appearance is crystal with a slight yellow tinge.
The aroma is pleasantly fruity with a hint of cooked rice.
The texture is similar to that of water.
The smooth, sweet flavor is overtaken by sourness.
The finish is light and crisp, with a nice lingering aftertaste.
This is... (if I may be so bold as to exaggerate) a silky Jikin 😳.
I felt it was so delicious.
It was also delicious after it cooled down and became cold!
This one was priced at a little over 2,000 yen for a bottle.
I drank it slowly, thinking that if I ever visit Nabari City in Mie Prefecture, I will definitely buy a bottle to take home.
Tonight, I opened a bottle of this famous sake in the first series to go with dried Hokke fish 💁.

It's from a different line of the very popular Jikin brand 🍶 Jikin is not so easy to find, but this one is usually available at some time (the price is ok 😅), so we haven't had it at home so I'll open it 💪.
When I open the bottle, I hear the sound of gas escaping and it feels surprisingly fresh ⁉️ and exciting ☺️
The aroma is a gentle melon/uricane aroma typical of Yamadanishiki, and the taste is fresh and exquisitely delicious with chili gas, acidity and fruity freshness on the tip of the tongue 😋😋😋😋.
The finish has a spiciness that is typical of traditional sake, but overall it is light and easy to drink.
It is not often that I get a chance to enjoy Jikin, but this is a bottle that will give me great satisfaction 💮.

Yesterday and today, I compared Jikin and Takasago from Kiyamasa Shuzo.
The aroma of Jikin is more fruity. The aroma of Jikin is more fruity, and Jikin is sweeter and more gorgeous.
Takasago has a calm aroma, a pleasant mouthfeel, and is comfortable to drink.

This sake is made by the same company as Jikin, Kiyamasa Shuzo.
It is a little less aromatic and umami than Jikin and more of a food sake, but it is very tasty!

On the first day of opening the bottle, there is almost no standing aroma, and the sourness and slight bitterness typical of the Nama-moto style of sake brewing are present, followed by a fusion with the concentrated umami. As the temperature rises, sweetness is added to the acidity, making it even more delicious. The last taste is tangy, spicy and bitter, which is quite to my liking 😋.
On the second day, the acidity settles down and the sweetness opens up to become even more delicious!
It is a very rare and beautiful sake, so I will enjoy it slowly 😊.
