At first, I wondered if the acidity of the yeast was strong, but as I drank more and more, I realized that it was not. As I continued to drink it, I was hit with a rich sweet umami flavor 😊No wonder it is so popular.
The sashimi set of tuna was served with the main dish.

This wine is light and refreshing, with a fresh apple-like aroma that fills the mouth. The body is not insistent sweetness like Jikon, but it is not persistent. The final taste is a bit bitter and disappears quickly, so it goes well with food, and it is also delicious when drunk on its own.
The reward for your hard work is Takasago by Kiyamasa Sake Brewery.
Takasago, a refined Junmai Daiginjo brewed by the brewery that produces the very popular Jikin, was a delicious and absorbing experience!
Jikin is so popular that you can't even find it in stores, but you can usually buy this one because it is a little expensive.
This year's Takasago has a refreshing yet fruity taste, so I think it is delicious both as a food sake and as a sake alone!

It is said to be a reissue and challenge brand from Kiyamasa Shuzo, but unfortunately I have never had enough Jikin to compare. The price was reasonable, but the taste was as good as expected. It is made from 45% Yamada-Nishiki, wooden casks, and sake yeast. The ginjo aroma and elegant texture on the palate are superb. It is a well-balanced bottle with a solid sake feel without being sweet. I would like to drink it again.

The umami is more assertive than the image Takasago had so far. The tangy, slightly effervescent taste on the tongue and the sharp acidity are impressive. #Kiyamasa Shuzo #Takasago
After drinking Jikin, I found Takasago hiding behind a bottle of Jikin.
First Takasago
It has a nice citrusy aroma.
It has a nice flavor, but it's so refreshing that it's easy to drink.
Jikin is good, but Takasago is also delicious.
It is a little expensive, but if it were available, I would buy it immediately.
Sake from a local brewery. You can't get the famous Jikin, but Takasago is a sake that is readily available.
It is a fruity sake like pineapple and very easy to drink.
