It's a brewery near me, but I've never had it before. This is a randomly selected Akita Jun Ginjo project, but it is exciting to encounter and discover new things. It has a pleasant yogurt-like acidity right after the bottle is pulled, and the next day the acidity settles down to give a very well-balanced impression. This is the first bottle of Akita Shun Ginjo 2021. It was my first time to try Ginrin. Just after opening the bottle, there is a faint aroma of apples. It is light and a little dry. The taste of the rice is softly felt, but it disappears smoothly. It gives the impression that you will never get tired of drinking it.

This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

This sake has a clean spiciness with the yogurtiness of a traditional sake brewery kept in check. The mellowness of the aftertaste that comes after the spiciness is good. Delicious!
